Hatch Green Chile Asparagus & Mushrooms Keto Side
The Hatch peppers in this easy to make keto side play a supporting role and allow the flavor of the asparagus and mushrooms to come through without overpowering the dish.
Since I had some left over Hatch Green Chiles from making Fajita Chicken with Creamy Hatch Green Chile and Mushroom Gravy and some asparagus and mushrooms that needed to get used, I thought I’d come up with something to use all three. This simple keto side dish is fast and easy and quite tasty.
If you can’t find Hatch Chiles, you can substitute an equal amount of Anaheim or poblano peppers. Or you can use jarred Hatch Chiles or canned green chiles.
All you need to do is chop the asparagus in 1″ pieces, slice mushrooms if you got the whole ones instead of already sliced ones, and dice the peppers. Melt the butter in a pan on medium heat, then add the veggies and cook until tender crisp.
Add the spices and lime juice and you have yourself a simple side dish that tastes delicious and is done in no time!
- 3 Tbsp butter
- 2 Fresh Hatch Green Chiles or similar pepper
- 10 oz Asparagus chopped in 1" pieces
- 1 8 oz pkg Sliced mushrooms
- 1/4 tsp Sea Salt
- 1/8 tsp Black Pepper
- 1/8 tsp Smoked paprika
- 1/2 tsp Garlic powder
- 1 Tbsp Lime juice

Melt butter in a large skillet. Add peppers to butter and sauté for 3 minutes.

Add mushrooms and asparagus. Cook until asparagus is crisp tender. About 8-10 minutes.

Add spices and lime juice. Mix well. Serve warm.
