Rich and decadent comfort food full of cheesy goodness. This Keto Loaded Broccoli Bake may even get the pickiest of veggie eaters to give it a go.
This is a super simple yet rich and delicious side. A fair amount of good fats while not too high in carbs. Most come from the broccoli, and I think we can all agree that there are worse carbs than broccoli to be worried about.
Because of the richness of this side dish, I’d recommend a simple main dish like chicken or steak. Nothing covered in cheese or full of fat. Believe me, you’ll get plenty yumminess. You could even add canned tuna, chicken, or salmon to the broccoli for a super fast and easy complete meal.
- 6 cups broccoli florets lightly steamed
- 4 oz cream cheese
- 1/2 cup sour cream
- 2 Tbsp butter melted
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1/4 tsp smoked paprika
- 8 Slices of Bacon cooked and crumbled
- 1 cup shredded cheddar cheese divided
- 1 cup shredded pepper jack divided
- 2 Tbsp chopped chives

Preheat oven to 400F. Spray 13 x 9″ baking pan with non-stick spray.

Combine cream cheese, sour cream, butter, salt, pepper, paprika, 1/2 cup cheddar cheese, 1/2 cup pepper jack cheese, and half the crumbled bacon. Mix well.

Place steamed broccoli in baking pan.

Dollop mixture over the top of broccoli.

Top with remaining shredded cheese and bacon crumbles, and chives.

Heat in oven until cheese is melted. About 15 minutes.

Remove from oven and serve immediately.
