Quick and easy to make egg-fast-friendly wafflewich with a hint of TexMex flavor.  Whether you’re on an egg fast diet or wanting something a little different for breakfast or lunch, this Keto Grilled Cheese Mexi-Wafflewich is sure to become a favorite.

I’ve always been one to love pancakes and waffles, but sandwiches not so much. But when you use waffles or pancakes for the bread part of one–GAME CHANGER! And this wafflewich is so good, I want to have it regardless of whether or not I’m partaking in the egg fast.

NOTE: If you want to be even more creative, spread an aioli before adding the cheese. One I like is mayo and the Mexican spice Tanjin. It’s adds just a little pizzazz.

Keto Grilled Cheese Mexi-Wafflewich

To make the waffle batter, dump all the waffle ingredients into a Magic Bullet or a Ninja and blend until it’s light yellow and frothy. Let it sit for about 5 minutes to allow the bubbles to reduce.

While batter is resting, go ahead and preheat waffle maker.

Once waffle maker is heated, pour batter into waffle maker.  The batter is enough for 1 LARGE waffle. If your waffle maker  is smaller, adjust accordingly. Close lid and wait for light to indicate it’s done,  or approximately 5-8  minutes. I like to cook mine a little longer, so it has more of the texture of a “flour” waffle.

Remove waffle and allow to cool for a few minutes.

Easy enough so far, right?

NOTES:

Waffle will not be as crispy as normal waffles. I like to cook mine a little longer in the waffle maker to get them firmer.

If you have a smaller waffle maker and it’s not in sections, you will want to keep waffle in one piece and keep cheese slices whole as well.

Keto Waffle

Now, it’s time to assemble the wafflewich.

Separate waffle into 4 parts. The large waffle makers create sections that are meant to be pulled apart.

Fold each cheese slice diagonally across, then tear into 2 triangles.  Place 1 triangle of each type of cheese together.

Place the combined cheese triangles on 2 of the waffle sections, then top with the other two sections, forming 2 wafflewiches.

Heat butter in a medium sized skillet.

Add both wafflewiches to the pan and cook on medium heat for about 2-3 minutes on each side until cheese is melted.

Remove from pan and enjoy.

For Waffle:
  • 2 eggs
  • 2 Tbsp mayonnaise
  • 1 Tbsp Parmesan
  • 1/8 tsp garlic powder
  • 1/8 tsp cumin
  • 1/8 tsp chili powder
  • 1/8 tsp smoked paprika
  • Pinch chipotle pepper
  • 1/8 tsp pepper
  • 1/8 tsp sea salt
For Filling:
  • 1 Tbsp butter
  • 1 slice cheddar cheese not processed or 1 oz shredded
  • 1 slice pepper jack cheese not processed or 1 oz shredded

For Waffle:
  1. In Ninja or Magic Bullet, add all ingredients up to the cheese. Blend until light yellow and bubbly. The batter will be very thin.
  2. Allow to rest for 5 minutes. This helps to allow time for the tiny bubbles to dissipate a bit, so there won't be as many air pockets in the waffle.
  3. While batter is resting, preheat waffle maker.
  4. Once waffle maker is heated, pour batter into waffle maker. The batter is enough for 1 large waffle. If your waffle maker is smaller, adjust accordingly. Close lid and wait for light to indicate it's done, or approximately 5-8 minutes.
