Who doesn’t love the rich cheesiness of broccoli cheddar soup, especially on a cold day? There’s a reason it’s considered a comfort food! It warms you from the inside out

And the best part? It’s super easy AND fast to make .

I added smoked paprika, chipotle chile pepper, and smoked cheddar to give it a bit of a twist on the typical broccoli cheddar cheese soup. If you like a little more spice, feel free to add more of the chipotle chile pepper. Also, I highly suggest not subbing in another cheese for the smoked cheddar. It really adds a lot to the soup.

NOTE: If you’d like to make this a one pot full dinner, add shredded rotisserie chicken.

Ingredients
  • 1 qt chicken bone broth
  • 1 c heavy whipping cream
  • 4 oz cream cheese softened
  • 12 oz bag of broccoli florets
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/2 tsp chipotle chile pepper
  • 1/4 tsp black pepper
  • 1 cup shredded smoked cheddar cheese
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup shredded parmesan
  • 1/4 tsp xanthan gum optional
Instructions
  1. Add bone broth, heavy cream, and softened cream cheese to a medium sized deep pot. Bring mixture to a simmer at medium heat.

  2. Add broccoli and all spices. Reduce heat and continue to cook until broccoli is desired softness. About 15 minutes.

  3. Add cheeses to pot and stir for about 5 minutes until cheese is melted and incorporated well.

  4. If soup is not to desired thickness, you may add the xanthan gum. Stir well.
