Well, pumpkin spice waffles to the rescue!
These super simple to make Fall flavored waffles are sure to hit the spot no matter what time of year it is.
All you have to do is dump all the ingredients into your Ninja or Magic Bullet, blend away, and BAM! Batter is done.
Pour the batter into the waffle maker and in about 5 minutes, you’ll have a yummy breakfast treat! And yes, you can have breakfast for dinner. I know I sure have.
This recipe makes one big ole Belgium-sized waffle. If you have a smaller waffle maker, adjust accordingly.
*Nutritional label does not include sugar alcohols or net carbs, so I’ve added that below as well as the NET CARBS.

- 1 Tbsp coconut flour
- 2 tsp Swerve Brown
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- Pinch of sea salt
- 1/8 tsp baking powder
- 2 Tbsp pumpkin puree
- 2 eggs
- 1/2 tsp pumpkin pie extract
- 1/4 tsp vanilla extract
- 4 Tbsp butter melted
- 2 Tbsp mascarpone cheese
- 4 tsp Swerve Brown
- 1/4 tsp pumpkin pie spice
- 2 Tbsp chopped walnuts

Add all ingredients to a Magic Bullet or Ninja. Blend until well mixed together.

Allow batter to sit for a few minutes to allow bubbles to reduce.

Heat waffle maker. Once it's ready, pour batter into waffle maker and cook until done. This will be enough for a large waffle. If your waffle maker is smaller, adjust accordingly.

Once done, remove from waffle maker and serve with the syrup.

Melt butter in the microwave for about 30 seconds. Add marscapone cheese and microwave an additional 30 seconds.

Add Swerve Brown and pumpkin spice. Mix well.

Stir in the chopped walnuts.
