Keto Peanut Butter Buckeyes taste like Reese’s peanut butter cups rolled up into a ball. A holiday favorite combination of chocolate and peanut butter.
This recipe was a request from a friend who lives in Ohio. I had heard about Buckeyes, but I didn’t know what made them different from a chocolate covered peanut butter ball.
Well, not much! Turns out the only difference is that buckeyes have a small circle that’s left undipped, so only the peanut butter shows. Apparently, they resemble a buckeye nut from a buckeye tree which is Ohio’s state tree. I had no clue!
Buckeye Nut
The peanut butter dough is easy to make, but it’s important that you get a nice consistency. The dough should be easy and firm enough to roll into a ball, but not crumbly. If it’s too oily, add a little more powdered Swerve or almond flour. If it’s too crumbly, add a little more melted butter.
It’s super important to make sure the dough is chilled enough to be able to roll into a ball, then the dough needs to go into the freezer for an hour to make them easier to dip.
Once the balls are frozen, they’re ready to be dipped. Slide a toothpick into the top and gently lower into the melted chocolate. Leave a small circle at the top if you want to do a true buckeye. Let the excess chocolate drip back into the container.
HINTS:
Allow melted chocolate to cool a little before removing peanut butter balls from the freezer.
If the toothpick starts to slide out of the balls, you may need to pop them back into the freezer. They thaw pretty quick.
To help get off some of the excess chocolate, you can gently touch the bottom of the balls to a separate sheet of wax or parchment paper before setting it on the clean sheet.
To get the toothpick out, gently twist once the ball is placed on the clean wax/parchment paper. You can also place your finger on the exposed peanut butter area and pull up on the toothpick.
The toothpicks will obviously leave a hole in the top of the balls and that’s not too pretty and not very buckeye-like.
Once they are thawed, you can slightly pinch the hole together and rub your finger across the area to smooth it.

- 1 cup natural peanut butter or almond butter, no sugar added
- 1/2 cup almond flour
- 2 Tbsp butter melted
- 3/4 cup Swerve Confectioners
- 2 Tbsp Swerve Brown
- 1 tsp vanilla
- Pinch of salt
- 3/4 cup Lily’s chocolate chips 4 oz
- 2 Tbsp refined coconut oil no coconut taste

Line baking sheet with parchment paper.

In a medium sized bowl, mix together the peanut butter (be sure it’s well stirred), almond flour, butter, both Swerves, vanilla, and salt.

Refrigerate dough until it’s firm enough to roll into balls. About 30 minutes.

Portion dough into Tbsp sized pieces and roll into balls. Place in freezer for 30 minutes. Makes dipping much easier with firmer dough.

While dough is firming, melt Lily’s chocolate and coconut oil in microwave for 30 seconds. Stir. Continue in 30 second increments until melted (usually takes 2 more), stirring in between. I suggest using a microwave safe coffee cup. It’s easier to get a deeper dip.

Use toothpick to dip balls into the melted chocolate. It will leave a hole in the top, but once balls are room temperature, you can use your finger to smooth it out. You can also use a dipping fork if you have one. Leave a small circular portion at the top of the peanut butter ball showing to resemble a real Ohio buckeye, otherwise it’s a peanut butter ball. 😛 Allow excess chocolate to drip off. You can also slightly touch the bottom on a separate sheet of parchment or wax paper before transferring it to a clean one. Much of the excess chocolate will stay on the first parchment or wax paper.

After dipping, place balls onto a parchment paper to prevent sticking.

Place dipped balls into refrigerator until chocolate shell completely hardens.

Store in refrigerator in an airtight container up to two weeks or in the freezer for up to three months.
Since each peanut butter is slightly different in oil ratio, you made need to make some adjustments. If balls are too crumbly and dry, add more peanut butter. If too sticky, add more Swerve Confectioners or almond flour.
