Banana, brown sugar, and rum flavors with a hint of cinnamon combine to make this Keto Banana Foster Waffle a low carb dessert-like breakfast that’s also Egg Fast friendly.
I created this recipe while participating in an Egg Fast. I wasn’t too sure about how much variety you could really get out of eggs, cheese, and healthy fats, but I was amazed at how creative you can be with those simple ingredients.
Back when I was a carb-loving-fiend, I used to make Banana Foster pancakes for breakfast. Of course, I used real bananas, rum, and brown sugar. But those days are long gone.
As I was preparing the batter for the waffles, I wondered if I could replicate to some degree the Banana Foster Pancakes that I looked so forward to on Sunday mornings.
Definitely couldn’t use real bananas. Wooooh Nellie, those are full of sugar. Caramel? Well, there are some pretty decent keto substitutes but when doing an Egg Fast, you probably want to avoid them. So, I decided to try out some extracts. Amazingly, they worked out pretty well. No, they are not the EXACT same as the decadent pancakes I used to eat, but the waffle stand-in version certainly did the trick, especially on the Egg Fast diet.
The batter is super simple to make. You just add the eggs, extracts, pinch of cinnamon, Swerve Brown (or Sukrin Gold/Regular Swerve) and cream cheese to a Magic Bullet/Ninja/or blender and blend it until it’s light yellow and frothy. Let batter sit for about 5 minutes while the waffle maker is heating. Once the waffle maker is hot and the batter has had enough time for some of the bubbles to reduce, pour batter into the waffle maker. That’s it!
The syrup is just as easy. Melt your butter, then add in the other ingredients and stir until Swerve is disolved. Note: don’t add other ingredients to butter before microwaving it. The extracts will sometimes do weird things when heated that way.
NOTES:
✯ Since these have a decent amount of sweetener, I would suggest the rest of the day to have non-sweet ingredients, specifically if on the Egg Fast diet.
✯ If you haven’t tried Swerve Brown, I highly suggest you get some. It has been a game changer! But if you don’t have it on hand and can’t get it, Sukrin Gold is a close 2nd and was my go to until the Swerve Brown discovery. 😛 If all else fails, regular Swerve is fine.
✯ The batter makes enough for a large waffle. If you have a smaller waffle maker, adjust accordingly.

- 2 eggs
- 2 oz cream cheese
- 1/8 tsp banana extract
- 1/8 tsp vanilla extract
- Pinch of cinnamon
- 1 tsp Swerve Brown or Sukrin Gold
- 2 Tbsp butter
- 2 tsp Swerve Brown or Sukrin Gold
- 5 drops banana extract
- 5 drops caramel extract
- 3 drops rum extract
- Pinch of cinnamon

Blend together eggs, cream cheese, Swerve, and extracts in a Magic Bullet or Ninja. It will be a thin batter with lots of bubbles.

Allow batter to sit for 5 minutes to allow bubbles to reduce.

Heat waffle maker. Once it's ready, pour batter into waffle maker and cook until done. This will be enough for a large waffle. If your waffle maker is smaller, adjust accordingly.

Once done, remove from waffle maker and place on plate and cover to keep warm.

Melt butter in the microwave for about 30 seconds.

Add swerve and extracts. Mix well.

Serve waffle with syrup.
Batter is enough to make one large waffle. If your waffle maker is on the smaller size, adjust accordingly.
