Bone broth is my newest obsession. Not only do I absolutely love it (and I’m not a soup or hot liquid kind of person), but I swear my skin is improving by leaps and bounds. Crazy. And it may be a coincidence, but I’m sleeping better, also!

So, what exactly is chicken bone broth? It’s a broth made from cooking chicken bones, connective tissue, cartilage, and skin in water for an extended time to extract all the goodness from them. What makes it different from standard broth is the amount of time it’s cooked. Luckily with an instant pot, you can greatly reduce the amount of cooking time. Win!!

Bones contain vitamins and minerals (calcium, magnesium, copper, iron, manganese, phosphorous, potassium, sodium, zinc), and amino acids (collagen, glutamine, proline) which makes for a nutrient rich broth.

You may have seen cartons of “bone broth” in the stores, but trust me when I say it’s not the same. Homemade is hands down the way to go. I like to use the bones left over from a rotisserie chicken and chicken feet. If you live in TX, HEB is pretty good about stocking chicken feet. Not to mention, they have ready available rotisserie chicken to go!

Aromatics along with fresh herbs and spices add depth to the flavor.

Chicken feet contain cartilage, bone, and tendons which make for a gelatin rich broth. I admit they freaks me out a bit, but it adds so much to the broth. I highly recommend using them.

Add the bones from the rotisserie chicken and the chicken feet to the pot, then place the carrots, celery, onion, and all herbs and spices on top. Fill Instant pot with water until 1″ below fill line. Add the apple cider vinegar which helps to leach all the goodies out of the bones.

Secure lid on instant pot. Be sure pressure valve is sealed. Set on manual high pressure for 300 minutes. Once done, allow pressure to release naturally. Remove lid and allow to cool, so it’s easier to handle.

Use a big spoon strainer to remove the large solid ingredients and discard.

Line sieve with cheesecloth and strain broth into another pot or large bowl. I usually do this twice.

Pour into single serving containers and store in fridge for a week or several months in the freezer.

You know you have a good bone broth when it forms a gelatin like this after it’s been refrigerated over night!

Ingredients
  • 1 rotisserie chicken deboned, save chicken for another meal
  • 2 pkg Chicken feet, 2 lbs
  • 1 onion, peeled and quartered
  • 4 celery stems with leaves
  • 1/2 lb small carrots, about 18
  • 3 cloves garlic, peeled
  • 1/2 Tbsp black peppercorns
  • 4 sage leaves
  • 4 bay leaves
  • 2 sprigs rosemary
  • 5 sprigs thyme
  • 3 Tbsp salt
  • 2 Tbsp apple cider vinegar
Instructions
  1. Place carcass from rotisserie chicken and chicken feet in bottom of instant pot.
  2. Add rest of ingredients except apple cider vinegar on top of bones.

  3. Cover with water until about 1 inch from fill line.
  4. Add apple cider vinegar to water. This helps to leach the good stuff from the bones!

  5. Secure lid on instant pot. Make sure pressure valve is sealed.
  6. Set on manual high pressure for 300 minutes.
  7. Once done, allow pressure to release naturally. Remove lid and allow to cool.
  8. Using a spoon strainer, remove the large ingredients and discard.
  9. Line sieve (mesh strainer) with cheese cloth and strain broth into another large pot or bowl.

  10. Pour into single serving containers and place in fridge for a week or freezer for several months.

Recipe Notes

I decided to not add the nutritional information because it would not be accurate since the spices and aromatics are removed and not eaten. Also, it’s hard to know how much of the vitamins, minerals, and other nutrients are present from batch to batch.
